Kyoto is still home to many long-established businesses that preserve techniques that have been handed down for many years.
By combining such artisanal techniques with ingredients from Kyoto, we arrived at our "Kyoto White Miso Gyoza."
Be sure to enjoy the taste of Kyoto with our authentic gyoza, which are packed with our utmost care.
The filling is made with plenty of Kyoto's Miyako Mochi Pork and Kyoto's Kujo Leek.
You can enjoy them as they are, or with a dipping sauce to change up the flavor. We have created these gyoza with a refined taste that brings out the full flavor of the ingredients.
They use Mochi pork, which is raised for 7-8 months, 30-60 days longer than regular pigs, resulting in a mellow, well-balanced meat and fat. The chewy, finely textured meat and sweet fat give it a rich, umami flavor.
Rice koji is sensitive to changes in temperature and humidity, so by making it by hand the traditional way, we value "making miso with as much human effort as possible."
The white miso, made with carefully selected ingredients and the clear underground water of the Hira Mountains, has a mellow sweetness that matches perfectly with the gyoza.
Add 1 tablespoon of oil to an unheated frying pan.
Arrange the dumplings and then turn the heat to high.
(Please cook the dumplings while they are still frozen.)
Do not brown the bread, but immediately pour in 180cc of water.
Cover and cook on high heat for 3 1/2 minutes.
After the time is up, remove the lid and turn the heat to low. Then add 1 teaspoon of sesame oil.
After about a minute, turn off the heat and serve.
We recommend eating it with "vinegar and shichimi", "vinegar miso", or "vinegar and soy sauce". Please enjoy it according to your preference!
